Strawberry Rhubarb Compote
1 quart of strawberries, de-stemmed and quartered
1 pound of rhubarb (4-6 stalks), peeled and diced
½ cup sugar
½ cup water
1 orange, zested (optional)
Combine ingredients and place in a medium sauce pan over medium heat. Simmer and reduce liquid until it thickens, approximately 35-40 minutes. Add orange zest
Serve with roasted pork or duck. Or use it as a nice compliment to a cheese plate or over ice cream for dessert!
